Back-to-School Pencil Cake

In honor of Brandon's first day of school, I made this cute pencil cake. I found the recipe in an old "Bake It Easy" cookbook and it's basically a 9x13 box cake cut in half. Then you trim the cake to make a pencil point. Tint store-bought icing with yellow and red food coloring and use chocolate sprinkles for the tip and the eraser transition area. Easy - and quite delicious! I actually made two (see picture below) because although you are supposed to put the two cut halves of the cake together to make a long pencil, I don't have a platter that long! So, instead I made 2 short pencil cakes. Brandon said they were "golf pencils" like the short pencils you use when you are playing golf. Spoken like a true future Masters winner!
